Fit Food Series | Open Faced Breakfast Sandwich

I don’t know why I decided to add more work onto my list of chores, but I LOVE food!! And I love sharing food ideas! I hope to get at least a couple of these out a month!

For today’s meal, I have a very simple and yummy Open Faced Breakfast Sandwich!

You will need:

2 Pasture Raised Eggs
1 Slice of Ezekiel Bread
2 Slices of Turkey Bacon
Fat Free Cheese(s)
MarketSide Wholly Guacamole
Walden Farms Mayo

I choose not to put measurements down because most people following already have their own set of macros that they’re following. So, you’ll end up adding however much of each that will meet your requirements. If you’re not following any specific diet or amounts, add anything and ENJOY!

Start by toasting your bread. Today is a low carb day, so I only used 1 slice. On a high carb day, I would’ve made a regular sandwich with 2 slices of bread. I actually had enough carb macros to use 2 slices, but I LOVE carbs and wanted to share it through out my first 3 meals.

I like to cook my eggs in my bacon oils, so I cook my bacon first. I recently switched to Butterball Turkey Bacon, and the slices are much smaller than the Oscar Meyer strips I had been using. If I were using Oscar Meyer, I would’ve probably only used one slice.

One the bacon is cooked, set them aside onto a paper towel to soak up any extra oils. Add your eggs. I like to cook mine so they are just a tad bit runny. Not too much to make a mess, but enough to close your eyes, sigh, and say, “Mmmmm Yesssss!” when it oozes 🙂 While the eggs are going, spread on your Walden Farm’s Amazin Mayo, then MarketSide Wholly Guacamole. I used the 100 calorie pouch, cut in half. Next, I measured out my cheeses. I only used 1/4 of a serving of each. For most meals, I generally use just enough to take care of my cheese cravings! If I had it my way, I’d eat cheese all day every day!! But it really messes with my belly and usually if I have just more than enough, I tend to OVER indulge 🙁

Last but not least, top with your eggs, let it cool for a minute, and dig in!
