Prepping Potatoes

I said it in my Facebook post….this is an EASY one. So easy, you’ll probably ask yourself, “Why didn’t I think of that?” 😛

For those that don’t normally meal prep, but have found themselves interested and eager to learn, take note! Carbs are an essential part of your daily meal intake. Do not be fooled by people who say carbs are bad for you. I explain it all in my eBook “Live Live & Eat Clean”, so I won’t go into major details. Basically, there are good carbs, and there are bad carbs. Obviously, eat the good, ignore the bad. Thankfully, sweet potatoes fall under the “good carbs.”

Meal Prep Sweet Potatoes

Aside from the fact that my house smells AMAZING each time I put one in the oven, there are many great reasons to prep them.

Sweet potatoes are:
A good source of vitamins C, D, and B6
Are high in carotenoides (helps strengthen our vision, boosts immunity, and are powerful antioxidants)
Contain iron and are a great source of magnesium and potassium
High fiber = regularity
And best of all, there are so many ways to make these!

The best part about prepping sweet potatoes is that all you have to do is poke some holes in them, add a light coat of EVOO, and put them in the oven until they’ve reached the softness you like. I usually leave mine in for about 20-25 min at 400*F. While these are baking, you have time to trim your meats, get your marinades made, chop your veggies, or start anything else on your stove. It’s a time saver AND they’re delicious!!
