I live in Missouri, in the middle of nowhere. Just my luck 🙄 I should’ve made @the_sauntering_one move to Kansas City with me 😂 can you imagine? 😂😂 I was diagnosed back in January and haven’t really made any attempts to quit eating beef, pork, lamb, dairy, beef by products, etc. My very few symptoms (extreme bloating/gas/sharp pains) have been acting up a lot these last few weeks. I couldn’t take it anymore. It hurt so bad and it was so uncomfortable. Last week I made small changes to what I ate but I didn’t have a whole lot of options at home. I was getting so frustrated. Getting overwhelmed with this is too easy because there isn’t a a set list of things to avoid and different websites say different things 🤦🏻‍♀️ I made the choice of going as dairy free as possible and avoiding all red meats….unless there is a special occasion 🤗 Who else is dairy free or dealing with alpha-gal? What are your must have items at home? I think I need more snack ideas than anything. And is there such a thing as a feta cheese alternative?? Ok. Not an IG worthy photo, but it’s too good no Ok. Not an IG worthy photo, but it’s too good not to share! I made @the_sauntering_one & me this salmon last night for today’s lunch & it was AMAZING! So much better than expected! It was still super moist today! I expected it to dry out & flake some, but it didn’t! Higher calorie meal than I normally eat in a sitting, but totally worth! Including the honey sauce, this meal was 703 calories. I know some of you are freaking out. DON’T. FREAK. OUT. You can make this with less salmon & less rice, & your calories would be much less! My normal lunches are usually between 350 & 500 cals, so slight adjustments needed for tonight 🤗 For my meal: 7oz skin on Atlantic salmon 1 serving white rice (45g dry) 100g green bean Sauce: 1/2 T honey 1.5 T lite Soy sauce 1/2 t @huyfongfoods Sriracha 7g @countrycrock plant butter • Heat pan and spray with EVOO •Once pan is hot enough to seat, add salmon skin down and cover • Cook time depends on thickness • When juices begin to escape the salmon, and it begins to look flakey, flip. Seat for a couple minutes, and flip back over. • Turn down heat, keep covered, and prepare sauce, veggies & rice. I just used the Great Value White Rice. Put rice in pot, wash til water is clear, and add water as indicated on package. (Real Asians, use the finger crease 😂) I like soft green beans so I boiled one in a pan. Once soft, dumped water and returns back to the stove. Added salt & pepper and cooked til I felt they were ready 🤷🏻‍♀️ While those boil, I just added all the sauce ingredients to a pot and put it on medium until it was all mixed well. So in love with my new kayak! Had a fabulous day o So in love with my new kayak! Had a fabulous day on the river yesterday with @the_sauntering_one and our kiddos! I was debating between this @jackson.kayak “Staxx” or the “Cruise 10.” Ultimately chose this one because the open space in front of me is perfect for my son to sit/paddle/relax when he goes with me. The “Cruise” most centrality had a better seat, but the space was much needed! We purchased through @omtcozark in Ozark, MO. A bit over a 2 hour drive for us. We first heard about Ozark Mountain Trading Company when we saw a post about their Demo Day a few weeks back where they take many of their kayaks and paddle boards out to the river for you to test out. We made the drive and showed up as they were starting to close down. Knowing we were not making a purchase that day, they still encouraged us to get out there to test ride and answered all our questions even through their event was technically over. We went by their store afterwards and found out that you can call ahead of your visit and ask them to meet you at the river with the kayak(s) you’re interested in, and you will be able to test them out before solidifying your decision. This was huge for us! Spending money makes me very anxious 😬 and this eased my mind quite a bit! We thought maybe one of the springs could be a potential wedding spot 👰🏻🤵🏻 First stop was Welch Spring (Welch Hospital Ruins), which neither of us had been to before. It’s an easy half mile walk to the spring. If you kayak/canoe/paddle by, you actually end up on the other side by the ruins. Zoom in and you can see the ruins to the left of the bluffs. I thought it was really interesting to have a hospital located her, so I had to look up the history on it. According to the @nationalparkservice site, In 1913, Dr. C.H Diehl bought the property for $800! He believed the spring water contained healing properties. He had hoped to run a campground/resort to help with the cost of his medical fees. Visitors traveled as far as OK & IL, but unfortunately, the roads to get to the hospital were not easily traveled. Dr. Diehl passed away in 1940 and his family was not interested in keeping the hospital running. I’d be curious to know if the family held on to the property, or sold it off before it became apart of the National Park! @the_sauntering_one and I have been on 2 “dates” since pre-covid! I’d say this was a day well spent. Day off from work & didn’t have to worry about the kids in the water! 👍🏼 Short Bend 👉🏼 Wesco 13ish miles. Lots of shallow areas. Lots of downed trees. I may or may not have sank my kayak on one of those trees 😬a little more technical that I’m used to! But, All the effort resulted in an amazing day! Jayson got super close to a raccoon in the middle of the river catching & eating crawdads. I saw turkeys fly (still not used to seeing this!). There were deer, snakes, ducks, turtles, plenty of fish & more! The coolest was a random waterfall slightly tucked away. Our last day date a few summers ago was also a kayaking trip, however, that resulted in some quick paddling and taking cover while a storm blew over! No storm clouds in site today! Alright. Trying a second meal prep company. I thin Alright. Trying a second meal prep company. I think I’m going to try several out, then give an overall review. What do you guys think? I don’t know much about this company yet. I was in the city today (St Louis) and knew there would be some companies to pick from. This was the closest one. Right off the bat, I was happy to see so many options and the macro breakdown. Downfall, the prices weredouble, triple, and even quadruple was I had previously been paying 😬 more info to come a little later 🤗 Starting tomorrow with the breakfast turkey, eggs & potatoes and I think maybe the salmon sushi bowl for lunch 🤗
The other night, Ally & I were headed home after s The other night, Ally & I were headed home after soccer practice. We rounded a curve & I was shocked. There was @gymshark RV at the end of a drive. I said out loud to myself, “what on earth are they doing on B-Hwy in St James, MO!?” Ive been a huge fan for many years, so of course I was excited! But also, really confused. This is seriously the middle of no where Missouri 😂 next, we saw a car w/CA plates. “OK. They’re following each other & probably got lost. There’s hardly any service on these backroads,” I told myself. Next thing we see is @hellahgood9 running on the side of this curvy, hilly, tiny country road. I saw his Gymshark socks. We realized they weren’t lost & he was clearly a sponsored athlete. naturally, we pulled over, checked IG & sure enough, this man was on day 57 of running across the country for a great cause! (👀 @soles4souls) We end up going home since they clearly didn’t need help. We played some soccer out in the yard for a bit & told @the_sauntering_one about who/what we saw, & he said, “why didn’t you say something earlier! Let’s get out & see if we can find him to cheer him on!” We loaded up & went back towards town, but he was no where to be seen. We continued into town to grab some dinner, & on our way back home, we saw the RV. We stalked them through the lot & while he was checking the lot for a place to park the RV, we stopped to talk to him. He started running in CA, was on day 57, & averaging 44 miles a day! I was sad to hear a few days later that while running though our neighboring town, he encountered some ignorant passerbyers who felt the N-word, among other things, were appropriate to yell out at him. It saddened & angered me, however it comes as no surprise seeing as how Owensville, MO is a small, rural town in Missouri that is predominantly white (98.54%). My thoughts when first seeing him out running: • Nothing cool ever happens in St James, MO! Gymshark is here! This is so cool! • Omg, he’s got such a cool story! • Lord, I hope he doesn’t step on the wrong persons property while out here... I had a thought to warn him to be extra careful in these areas, but I didn’t want to bring any (cont. in comments)
Hmmm. Meal Prep breakfast wasn’t too shabby. Asi Hmmm. Meal Prep breakfast wasn’t too shabby. Aside from having to assume the macros, I’m satisfied. Lacked flavor, but added salt. And I didn’t have to make anything or put anything together. So I’m happy. I ended up guesstimating this at 527calories, 26p, 40c, 31f Swipe ➡️ Just eyeballing it all, I’m assuming: • Standard serving size of sausage, 2oz/56g - this meal prep company is also a butcher shop, so I assume it’s one of their own pigs, and it was really yummy! • 1/2 serving of shredded cheese, 14g • standard serving of red potatoes, 4oz/113g, maybe have been a little less • 50g of spinach. Maybe? You know how deciding a serving of spinach is raw vs cooked! 😂 • and eggs. I don’t think these were really eggs. The consistency did not match to that of real scrambled eggs. They were like the eggs you’d get at a buffet, but not as dense. I’m going with powdered eggs on this one. Maybe 4T • few chopped pieces of a purple onion in there too I brought a taco-ish looking meal for lunch. It’s the one I’m most excited about! Do you meal prep breakfast? Normally, at work, I’m just a yogurt girl. Simple, light, tasty. But this one was also simple & light. Lacked flavor, but still good. Giving this meal prep company another try. It’s Giving this meal prep company another try. It’s the only one some what local to our area, and priced really well. $6 each, buy 3 get, 1 free. This order broke down to $4.50 a meal. Much less than what I spend on lunch when I eat out! Overall, I felt that my first go at it was pretty good, just really bland. The rice in one last time wasn’t cooked all the way so it was hard and kinda crunchy. All of these are guaranteed under 550cal per meal, but no macro breakdown, so it’s a guessing game. But, love that I wont have to cook meals for this week, just meals for the fam. Trying to focus on workouts this week and getting things done around the house. So the less planning and cooking on my end makes my week so much easier. What are your musts for a meal prep company? Macro breakdown? Custom macros? Few lessons learned today: • remove the cream from the Oreos • take the time to turn the Oreos into a grated Parmesan like substance instead of just beating the Oreos into chunks. Makes it a lot easier to smooth • get a better smoothing scraper - mine has rounded edges and I definitely want one with sharp 90* angles • start 3 days before the birthday, not 3.5 months after 😂😂 Sorry we suck.
