We had our @nemoequipment Roamer Double in there and there was more than enough room for a couple more sleeping pads! Alpha-Gal & Macro friendly meal 🤤 Chicken kabo Alpha-Gal & Macro friendly meal 🤤 Chicken kabobs, shrimp & corn • chicken & veggies marinated in zesty Italian dressing • shrimp smothered in plant based @countrycrock butter & @slapyamama • corn is just buttered & they could add their own seasonings cause I kinda forgot about it 🤷🏻‍♀️ I’ve been sick with strep & a sinus infection since Wednesday. This was a really easy meal to grill up as my first real meal since being sick! It’s also one of my favorites! Lots of different flavors! For Jayson & the kids, they got beef, sausage & crab on theirs too 🤗 Despite having Alpha-Gal, I’m really lucky. The sugar, gelatin and carrageenan don’t seem to bother me, so if I can’t avoid it, it’s no biggie. It’s really the dairy and red meats that have any impact on my body. And when i do react, it’s with serious GI pains. No hives, anaphylaxis or any other major reaction. With the exception of…. In 2012 while in nursing school, I ended up in the ER with hives and anaphylactic symptoms. They gave me steroids and sent me home with an epi pen. In 2015, I was pregnant with my son. Got in my car and my feet felt like I was standing on lava. Then they started itching real bad. My hands started next. Got to my parents house and I had hives/welts down half my body. Popped a couple Benadryl’s & I was fine a little later. Aside from those two events, I’ve had no other major symptoms. I guess I got lucky. I don’t have to worry about fumes, cross contamination, medications in gel caps, or and insane amount of ingredients to avoid. It makes cooking family meals so much easier than I thought it was going to be! Trying to share my Alpha-Ggal friendly foods because all of this diagnosis is so overwhelming. The last thing I need is my food to be overwhelming. When I become frustrated with food, I binge. When I binge, I make really unhealthy decisions. So, hopefully, putting these out there will help remind me what to make when I become frustrated, and maybe it might also help others 🤷🏻‍♀️ These burgers are like any other, but uses Turkey instead of beef, and vegan cheese and Mayo Macros: 37p 27c 32f 525cal Ingredients: • 6oz ground turkey (or any meat substitute) • seasonings you like (salt, pepper, onion and garlic powder for me) • bun with the least amount of reactive ingredients 🤦🏻‍♀️ • @followyourheart cheese slice • #followyourheart vegan Mayo • Veggies to top your burger • @countrycrock plant butter Get your grill started. Mines a good ole @webergrills. Started my coals then began putting it all together. 🦃 Place the meat in a bowl and add seasonings. Make/shape into patties 🍔 oil/spray grill however you like, then place patties on the grill 🍞 while patties are on the grill, wrap buns in foil and placed them in the oven on a low heat. I’m a butter kinda girl, so I actually butter the insides of the buns and place them on a heated pan or in the oven on “toast” mode 🦃 flip your turkey patties. While they continue to cook, slice up any veggies you want (lettuce, onion and tomato for me) 🌡 once your patties reach 165*, place slices of cheese on top and move them away from the fire, and cover the grill. It was so gross/muggy/sticky all morning! Had to open the doors for a while cause it was in the 70s outside during the early half of the morning! Bet my curls would’ve lasted at least til noon had it not been a sauna inside! 🥵 Funny story. Back in the day when I was 20ish, I went to a salon and asked for waves like the Kardashians. I walked out with tight curls like a poodle 😂 my waist long hair was suddenly shoulder blade length! I was miserable for years after that! FYI, Say No to perms 😂 What are your tricks to long lasting curls? I have never been able to get my curls to last for more than a few hours! I’ve tried mousse, taming cream, not washing my hair for days, lots of hair spray before, during and after each curl. Can’t get them to last. What’s the secret?? I washed my hair Saturday, so it’s not super clean. Plus, Saturday night, I used my normal heat protectant spray by @chihaircare and a sleek shine oil from @redken. Also used @harrys taming cream. curled my hair just like this for a party Saturday night. I live in Missouri, in the middle of nowhere. Just my luck 🙄 I should’ve made @the_sauntering_one move to Kansas City with me 😂 can you imagine? 😂😂 I was diagnosed back in January and haven’t really made any attempts to quit eating beef, pork, lamb, dairy, beef by products, etc. My very few symptoms (extreme bloating/gas/sharp pains) have been acting up a lot these last few weeks. I couldn’t take it anymore. It hurt so bad and it was so uncomfortable. Last week I made small changes to what I ate but I didn’t have a whole lot of options at home. I was getting so frustrated. Getting overwhelmed with this is too easy because there isn’t a a set list of things to avoid and different websites say different things 🤦🏻‍♀️ I made the choice of going as dairy free as possible and avoiding all red meats….unless there is a special occasion 🤗 Who else is dairy free or dealing with alpha-gal? What are your must have items at home? I think I need more snack ideas than anything. And is there such a thing as a feta cheese alternative?? Ok. Not an IG worthy photo, but it’s too good no Ok. Not an IG worthy photo, but it’s too good not to share! I made @the_sauntering_one & me this salmon last night for today’s lunch & it was AMAZING! So much better than expected! It was still super moist today! I expected it to dry out & flake some, but it didn’t! Higher calorie meal than I normally eat in a sitting, but totally worth! Including the honey sauce, this meal was 703 calories. I know some of you are freaking out. DON’T. FREAK. OUT. You can make this with less salmon & less rice, & your calories would be much less! My normal lunches are usually between 350 & 500 cals, so slight adjustments needed for tonight 🤗 For my meal: 7oz skin on Atlantic salmon 1 serving white rice (45g dry) 100g green bean Sauce: 1/2 T honey 1.5 T lite Soy sauce 1/2 t @huyfongfoods Sriracha 7g @countrycrock plant butter • Heat pan and spray with EVOO •Once pan is hot enough to seat, add salmon skin down and cover • Cook time depends on thickness • When juices begin to escape the salmon, and it begins to look flakey, flip. Seat for a couple minutes, and flip back over. • Turn down heat, keep covered, and prepare sauce, veggies & rice. I just used the Great Value White Rice. Put rice in pot, wash til water is clear, and add water as indicated on package. (Real Asians, use the finger crease 😂) I like soft green beans so I boiled one in a pan. Once soft, dumped water and returns back to the stove. Added salt & pepper and cooked til I felt they were ready 🤷🏻‍♀️ While those boil, I just added all the sauce ingredients to a pot and put it on medium until it was all mixed well. So in love with my new kayak! Had a fabulous day o So in love with my new kayak! Had a fabulous day on the river yesterday with @the_sauntering_one and our kiddos! I was debating between this @jackson.kayak “Staxx” or the “Cruise 10.” Ultimately chose this one because the open space in front of me is perfect for my son to sit/paddle/relax when he goes with me. The “Cruise” most centrality had a better seat, but the space was much needed! We purchased through @omtcozark in Ozark, MO. A bit over a 2 hour drive for us. We first heard about Ozark Mountain Trading Company when we saw a post about their Demo Day a few weeks back where they take many of their kayaks and paddle boards out to the river for you to test out. We made the drive and showed up as they were starting to close down. Knowing we were not making a purchase that day, they still encouraged us to get out there to test ride and answered all our questions even through their event was technically over. We went by their store afterwards and found out that you can call ahead of your visit and ask them to meet you at the river with the kayak(s) you’re interested in, and you will be able to test them out before solidifying your decision. This was huge for us! Spending money makes me very anxious 😬 and this eased my mind quite a bit! We thought maybe one of the springs could be a potential wedding spot 👰🏻🤵🏻 First stop was Welch Spring (Welch Hospital Ruins), which neither of us had been to before. It’s an easy half mile walk to the spring. If you kayak/canoe/paddle by, you actually end up on the other side by the ruins. Zoom in and you can see the ruins to the left of the bluffs. I thought it was really interesting to have a hospital located her, so I had to look up the history on it. According to the @nationalparkservice site, In 1913, Dr. C.H Diehl bought the property for $800! He believed the spring water contained healing properties. He had hoped to run a campground/resort to help with the cost of his medical fees. Visitors traveled as far as OK & IL, but unfortunately, the roads to get to the hospital were not easily traveled. Dr. Diehl passed away in 1940 and his family was not interested in keeping the hospital running. I’d be curious to know if the family held on to the property, or sold it off before it became apart of the National Park! @the_sauntering_one and I have been on 2 “dates” since pre-covid! I’d say this was a day well spent. Day off from work & didn’t have to worry about the kids in the water! 👍🏼 Short Bend 👉🏼 Wesco 13ish miles. Lots of shallow areas. Lots of downed trees. I may or may not have sank my kayak on one of those trees 😬a little more technical that I’m used to! But, All the effort resulted in an amazing day! Jayson got super close to a raccoon in the middle of the river catching & eating crawdads. I saw turkeys fly (still not used to seeing this!). There were deer, snakes, ducks, turtles, plenty of fish & more! The coolest was a random waterfall slightly tucked away. Our last day date a few summers ago was also a kayaking trip, however, that resulted in some quick paddling and taking cover while a storm blew over! No storm clouds in site today!
